Assistant Creamery Manager
Department of Food Science
Location: Knoxville, Tennessee

Responsibilities: The Department of Food Science at the University of Tennessee seeks outstanding candidates for an Assistant Creamery Manager to work with the Creamery Manager to organize, plan, and implement Creamery efforts. The Assistant Creamery Manager will:

  1. Provide guidance and supervision to creamery staff, including production employees, students and support staff;
  2. Recruit, hire, manage, and supervise staff and student employees;
  3. Oversee staff training, professional development, and reviews;
  4. Develop progressive experiential learning opportunities for students to develop practical and professional skills to jump-start their careers;
  5. Create schedules for operations, approve time off, manage conflict and resolve issues;
  6. Develop and deliver high-level presentations to internal and external stakeholders;
  7. Compile, evaluate, and analyze data for creamery efficiency and operations reports.

Relative to food safety and quality, the Creamery Assistant Manager will:

  1. Oversee day-to-day operations, including ingredient handling, ice cream production, packaging;
  2. Ensure efficient and effective operations within established guidelines, objectives, and goals;
  3. Assess risk and make decisions to ensure safe and wholesome food manufacturing;
  4. Maintain the highest quality standards in the production of dairy products;
  5. Conduct regular quality checks and ensure compliance with local and federal health and safety regulations, food safety and sanitation guidelines, and university policies;
  6. Implement product holds, investigate issues and determine product release;
  7. Develop and test new dairy product recipes;
  8. Calculate formulations, conduct analysis of ingredients and determine where to source;
  9. Manage orders and stock rotation;
  10. Innovate and introduce new flavors and products to the Creamery's offerings;
  11. Monitors inventory levels of raw materials, packaging supplies, and finished products;
  12. Ensure proper maintenance and cleanliness of creamery equipment and facilities;
  13. Coordinate repairs and maintenance on equipment as needed.
